CRESCIONDA
Ingredients
4 Eggs separate the yolks and whites
1 oz Amaretti
1 oz Dry cookies
3 Tablespoons of sugar
2 Tablespoons of flour
2 Tablespoons unsweetened cocoa
Zest from a Lemon
1 Teaspoon ground cinnamon
1 Shot of rum or anisette
1 Pint of milk
Put the biscuits in a food processor and chop finely.
Add the sugar, flour, cocoa and cinnamon, lemon zest, rum and blend together. Add the egg yolks and mix again.
Add milk and blend.
In a separate bowl, whip the egg whites with a pinch of salt, then fold into the mixture of cocoa and biscuits.
Mix well and pour into a 10 inch pie dish lined with wax paper.
Place in a preheated oven at 350?F for around 20 minutes (maximum 25 minutes).
Test with a skewer - when cooked the surface will be slightly crisp and the center cooked but soft.
