LAMB MEATBALLS WITH MINT SAUCE
Ingredients for 6 people
For the dough
- 21 oz ground lamb
- 2 egg yolks
- 1 bunch rosemary
- 1 bunch parsley
- 7 oz stale bread
- 1 cup of milk
- 1/2 cup white wine
- 1/2 cup vinegar
- 7 oz flour
- Salt and pepper to taste
Soak the bread in the milk and squeeze it. Mix all the ingredients by hand, then shape small balls and flour them. Cook in a frying pan on both sides. When cooked, deglaze with white wine and white vinegar.
For the sauce
- 2 oz chopped mint
- 1 dl white vinegar (warm)
- Salt to taste
Mix all the ingredients and let them rest for 3 hrs. Add the sauce to the meatballs and enjoy!
