Linguine with anchovies and buffalo mozzarella
LINGUINE WITH ANCHOVIES AND BUFFALO MOZZARELLA
Ingredients for 4 people
- 400 g linguine pasta
- 300 g of anchovies
- 400 g cherry tomatoes
- 150 g of buffalo mozzarella
- 80 g of extra virgin olive oil
- 1 clove of garlic
- 1 bunch of parsley
- Boned and washed anchovies
Take a large frying pan, put it on the fire, pour the oil and let it heat up.
Meanwhile, prepare the chopped parsley and garlic and pour it into the hot oil.
When the garlic is golden, add the tomatoes and cook for 5 minutes, then add the anchovies.
Close with a lid and let all cook for 10 minutes.
Cook the pasta,when it is "al dente" pour in the pan and add the mozzarella into small pieces and stir.
