Pasta dishes


Ingredients for 6 people

For the sauce:

  •  1,5 kg of tomatoes
  • 1 white onion
  • basil

For the dough:

  • 400 grams of maccaroni
  •  1.5 kg of eggplant
  • mozzarella
  • 60g of Parmesan cheese
  • basil
  • half a liter of extra virgin olive oil (for frying)


Prepare the tomato sauce in a pot by placing the tomatoes cut in two, a bit of sliced ??onion and a bit of basil. Close the lid and keep the flame low until the tomatoes are soft.

Remove from the heat and pass through the mill.

Put 3 tablespoons of oil in a pan, fry lightly and add the rest of the onion thinly sliced??.  As soon as it is softened add the tomato paste and cook for at least an hour. After cooking add the basil.

In the meantime cut the eggplant into slices and a few pieces into cubes, sprinkle with salt and let it rest to sanitize for 15 minutes. After which?. flour with just a little bit flour and fry.  Dry thoroughly with paper towels.

Grease the molds (cm. 8 in circumference and 5 cm high)  with butter.  Using flour to prevent sticking  line the inside of the mold with 6 slices of eggplant, leaving about an inch hanging out. 

Fill  halfway with pasta and cover with cubes of mozzarella and diced eggplant, a little Parmesan cheese Cover with other pasta, a ladle of sauce and finally close with eggplant

Bake at 180 ? for half an hour, remove from the oven for cooling.
