Ingredients for 6 people

  • A clean chicken (about 1.5 kg)
  • 200 gr. vegetable broth
  • 3 shallots
  • A medium onion
  • two carrots
  • A stick of celery
  • 10 mandarins
  • 1 bay leaf
  • a sprig of thyme
  • a knob of butter
  • 3 tablespoons extra virgin olive oil
  • Salt.

Fill the chicken with shallots, peeled but whole, thyme, bay leaf and 2 tangerines with peel, cut into small pieces.

Coat the chicken with the butter and oil, tie the legs so that the filling does not spill out:

Place the chicken in a baking dish, cover and bake at 180 degrees for about 50 '

Meanwhile, prepare the chopped carrot and celery. Squeeze 2 tangerines and put the juice aside.

Chop the peels and other 2 tangerines, after the cooking time, put them in the pan with the chicken broth and chopped vegetables.

Return to the oven always covered for another 50 'or so.

Once cooked, remove the pan from the oven, take the chicken, cut the string and put it on a plate covered with aluminum foil and keep warm.
