Pasta dishes


Ingredients for 4 people

  • 400 gr of paccheri pasta
  • 4 artichokes
  • 300 gr of sheep ricotta cheese
  • salt and pepper .
  • 2 tbs of extra virgin olive oil
  • 4 anchovies
  • 4 olives.
Clean the artichokes by removing excess leaves leaving only the hurts.

Cut hearts into strips. Heat up in a pan, add the finely chopped onions and when it cooked add in the artichokes.Cook the artichokes until soft.Put the ricotta in a bowl, add the eggs, parmesan cheese, salt and pepper.Work well the ricotta and then add the artichokes blended and mix together. Boil some water in a pot and when bubbles arrive add a tbs of salt and cook the pasta.

Cook the pasta until al dente, drain and stuff the pasta with the artichokes and cheese cream.Place the pasta in a serving plate and garnish with anchovies, olives and extra virgin olive oil to taste
