LEMON TART

Ingredients for 6 people

FOR THE PASTRY

200 gr. of flour

100 grams of butter

100 gr. powdered sugar

1 egg

a pinch of salt

grated rind of a lemon.

FOR THE CREAM

3 eggs

200 grams of sugar

3 untreated lemons

2 tablespoons of fresh whipped cream

the grated rind of one lemon

PREPARE THE PASTRY

Lay out the flour on a table and make a fountain in the middle . Put in the butter, egg, sugar, lemon zest and a pinch of salt at room temperature. Mix the ingredients together quickly, form a ball with the dough and wrap it up in a towel and put it in the fridge for about an hour. When chilled, roll out the dough into a greased mold of about 22 cm, cover the dough with a sheet of baking paper and fill with dried beans (this is necessary to maintain the form of the pasta when baking). Bake in preheated oven at 160 degrees for about 30 minutes.

PREPARE THE CREAM

Beat the eggs with the sugar, add in lemon juice, zest and cook over low heat, stirring. When it just starts to thicken, turn off the heat and when it is still warm add in the cream. When the cream is ready, use it to fill up the pastry that has been has been taken out of the baking dish and placed on a plate.Garnish with lemon slices and put it in the fridge for a few hours.
