SCIALATIELLI WITH FRESH CLAMS AND PUMPKIN FLOWERS

For 6 people

  • 1 kg fresh clams
  • 5 boxes of pumpkin flowers
  • 1 clove of garlic
  • parsley
  • extra-vergin oil
For the pasta

  • 250 g flour
  • minced durum wheat semolina
  • 125 g milk
  • 1 egg
  • blended parsley
  • basil
Knead the mentioned ingredients for the pasta and let it rest for two hours.

Spread the pastry which must be four millimeters thick,with the special machine and form a kind of "pappardelle".

To prepare the sauce take off the central pistil and the stalk of the flowers.

After having cut them into pieces by hand,cook the half in a pot with boiling oil and some vegetable juice.

So,blend them well until the mixture is well smooth.

Let the clams with garlic,oil and some water.

As soon as they are all opened add two table spoon of pumpkin flowers cream.

Cook the pasta in salt water and add the sauce.

Complete with the pumpkin flowers cut into pieces,the parsley and the extra-virgin oil.

Mix the pasta with the clams.
