THE DOVE

Dose for 1 mold

  • 4 eggs
  • 150 gr. flour 00
  • 150 grams of flour manitoba
  • 100 gr. of potato starch
  • 150 gr. of icing sugar
  • 100 gr. of butter
  • 1 glass of milk low
  • 75 gr. of candy
  • 75 gr. raisins
  • (otherwise replace candied fruit and raisins with 150 gr. chocolate chips)
  • 2 cubes of yeast
  • 2 packets of vanilla
  • 1 pinch of salt
  • 50 ml of liquor for dove
  • (found in some grocery stores, or contact me)
Exterior decoration

  • 1 egg white
  • 50 gr. almond flour
  • 1 vial of essence of bitter almonds
  • 30 gr. of icing sugar
  • Almonds and granulated sugar (to taste)
Process

  • First rising
Prepare a dough mixing the two types of flours, yeast and milk.

Cover with a cloth and let rise until doubled in volume.

  • Second rising
Adding more flour and more milk and give it time to rise.

  • Third rising
Preheat oven to 200 ?

Mix together all the ingredients (if you use the raisins, they will need to be washed with warm water, dried and lightly floured)and pour into the mold. Cover and let it rise again.

When the mixture has almost reached the edge of the mold, place it in the oven for 10 minutes at 200 ?, then lower to 180 ? for another 20 minutes

Five minutes before turning off the oven, use the egg whites to which has been added ground almonds, icing sugar and almond essence.

Spread it all on the dove and almonds and granulated sugar to taste
