FRIED ZUCCHINI FLOWERS STUFFED WITH MOZZARELLA AND ANCHOVIES

Ingredients for 4 people

300 gr zucchini flowers

150 gr flour

100 ml beer

2 eggs  

salt and pepper

oil for frying

Wash the zucchini flours well and dry with paper towel. Prepare the flowers and fill with diced mozzarella and anchovies.

Prepare the batter. Sift the flour and mix with the beer the eggs salt and pepper, mixing constantly with a hand held beater. Heat enough oil in the pan and fry the flowers after dipping them in the batter. In 3 or 4 minutes when cooked use paper towels on a plate for draining off the excess oil.
